This is for the busy moms out there, or if you are just plain busy. But who isn't busy these days? Here is how I meal prepped for this week. Easy and convenient to go Breakfasts and pre-made meats for dinners to last the rest of the week. There's nothing like a good home cooked meal ready to eat ( or ready in 5 min) when you get home on those busy days during the work week. And healthy too!
Frittata
Frittata that I can cut into individual pieces and freeze for the whole week for breakfast. First I cut kale spinach mushrooms tomatoes onions jalapeños and cooked cut bacon and turkey meat and put in a greased baking pan.
Then I whisked 12 eggs with 1/2 cup of milk and covered the veggies.
Seasoned with salt and pepper
Covered with your choice of shredded cheese and green onions
Bake at 350 for 30 min.
Cut into individual pieces and package and freeze
Meats for Dinner
Meats for the rest of week includes baked turkey meatballs and chicken thighs
Bake seasoned ground turkey meat shaped into balls at 425 degrees for 18-20min
Bake chicken thighs at 350 for 40 min
Or
Slow cook chicken thighs on high for 4 hours or on low for 8 hours.
